Chef's Note: This is one of my Easy One Pot Dinners
Ingredients:
4 Lamb Shanks
3 tbsp. Butter or Margarine
1/4 cup Flour
1 1/2 cups chopped onions
1 cup chopped celery
1 can Italian Stewed Tomatoes
Water to cover
3/4 cup Port Wine
16 baby carrots
1/2 tsp. Salt
1/4 tsp. Pepper
2tsp. Oregano
1 tsp. Garlic Powder
Directions:
Mix Butter/Margarine and Flour into a roux
Put all the ingredients in a large pot
Simmer covered for 2/1/2 to 3 hours or until tender and stir occasionally. Add water if needed so ingredients do not burn at the bottom
Remove Lamb Shanks and pour juices and vegetables into blender. Blend gravy on high
Return Lamb Shanks to the pot.
Serves 4
